How to prepare Nigerian Egusi: Hey, lovelies welcome to HOW TO DO with LILY, today we will be making Nigerian Egusi soup.
Egusi seed is a good source of potassium and calcium, these minerals help to regulate blood pressure. It is also a rich source of magnesium, phosphorus, iron and zinc. And just like all plant foods, egusi is naturally cholesterol-free.
Egusi helps to prevent bacterial infections, diabetes and also stimulate hair growth.
Ingredients for this delicious meal are:
Egusi
Palm oil
Kpomo
Shaki
Beef
Roundabout
Cow tail
Stockfish
Smoke catfish or any kind of dry fish of your choice
Crayfish
Ugu leaf
Pepper (fresh pepper)
Onions
Seasoning cube
Salt
Kitchen glory
Procedure:
De-bone your fish and wash (add salt to warm water then use to wash the fish, it will remove any kind of dirt from the fish)
Wash your stockfish.
Wash your different proteins carefully (make sure it’s sand-free)
Steam your meat (add pepper, salt, seasoning cube, onions and the kitchen glory)
Allow it to cook for a while then add your water, fish and stockfish
Allow it to cook for a while,
Bring out the stock water because we will use it to fry our Egusi
Put palm oil in an empty pot, allow it to get hot
Then add you grinded Egusi and stir
After a while add a small portion of the stock and stir
Once the egusi dries, add more stock
Continue the process until the stock finishes
Add the quantity of water you want depending on the quantity of Egusi and how thick you like your soup to be
Add your cooked meat and fish, then taste to see if you need to add extra ingredients like seasoning cube, salt and pepper
Add crayfish,
Allow it to cook between 10-15 minutes so that the meat and fish will be friends with the egusi
Add small ugu leaf, depending on how you like it, you can choose to add more than what we have in the picture
Then allow to cook for 5 minutes and your soup is ready, best served with eba, pounded yam, semo or poundo
