Today on how to do with LILY, we will be making Nigeria palm oil rice popularly known as MTN rice
Here is my secret recipe for it;
Dry prawns
Pepper (fresh and dry)
Crayfish
Vegetable leaf ( ugu)
Palm oil
Dry fish
Onions
Salt
Seasoning cube
1 sachet gino tomatoes and pepper mix
Rice
Procedure
Parboil your rice for a few minutes and properly wash
Wash your vegetable ( ugu) and slice
De-bone your dry fish and keep separately
Slice your onions
Slice your small fresh pepper (optional)
Blend your crayfish
Put an empty pot on the fire
Add your oil and let it get hot
Add your onions and allow to fry
Add your sachet tomatoes and allow to fry
Add water to it

Add your de-bone dry fish and let it cook
Add your dry prawns and allow to cook
Add your blended crayfish
Add seasoning cube and salt to taste
Add your dry pepper
Add your Rice carefully
Top the water in the pot if there is a need to add more water
Cover your pot and let your rice cook
Allow your rice to cook properly
Before the water dries taste to see if seasoning cube, salt and dry pepper is enough
If your spices are not enough add more and still allow your rice to cook
Once you notice that the water is dry (don’t let your rice burn)
Add your slice of fresh pepper (optional)
Add your vegetable ( ugu) and close the pot for 1 minute
Stir the food
Your rice is ready
Best served with a chilled drink
