Today on how to do, we will be making party Jollof with goat meat and the Ingredients are;
Rice
Goat meat
Carrot
Green beans
Green peas
Crayfish (optional)
Pepper
Tomatoes
Tatashe
Onions (enough)
Vegetable oil
Foil
Seasoning cube
Spices
Tin tomatoes (optional)
I don’t enjoy cooking my Jollof rice with tin tomatoes especially party Jollof so I prefer to use only fresh tomatoes, tatashe, and pepper.
Procedures
Blend your pepper, tomatoes (beautiful looking red tomatoes), tatashe and onions.
Steam your goat meat with the required seasoning cube, spices, onions and pepper.
Ensure the spices get into the meat very well
Parboil your rice for a while
Chop your carrot, green beans and green peas
Steam your tomatoes, pepper, onions and tatashe mix until water dries.
Slice your onions
Put your dry pot on the fire
Add your vegetable oil
Put a little portion of the sliced onions
Let it fry
Add your tin tomatoes and let them fry ( remember using tomatoes paste is optional)
Add your stem mix and let it fry (Tomatoes, pepper, tatashe and onions mix)
Add your spices and stir very well
Add your seasoning cube

Add your salt to taste
Ensure the ingredients are in its right proportion
Let it cook
Add small water
Add your rice
Cover your pot with foil before using the pot cover
Let your rice cook
When you notice that your rice is properly cooked or burnt add the leftover onions, Green beans, Green peas and carrots ( please note that party Jollof aroma comes out when the rice gets burnt)
Stir and bring down the rice
You can either fry your meat or just add like that
Your rice is ready
Best serve with chilled juice
